GAPS Diet: Day Seven May 3, 2008
Here’s what we’ve eaten for dinner the past few nights:
Friday: Taco Meat (ground beef with Mexican seasoning, i.e. cumin, chili powder, etc.) on Lettuce Leaves with Avocado and a bowl of Chicken Broth
Thursday: Carrot Ginger Soup, Sausages, Sauerkraut
Wednesday: Sloppy Joes in Lettuce Wraps with a bowl of Chicken Broth
Tuesday: Roast Chicken, Green Salad, and a bowl of Chicken Broth
I’m racking my brain trying to think of dinner ideas for this week. It’s not so easy cooking with no dairy and no grains. I have some shrimp in the freezer but I can’t think of what to do with it since I can’t use butter. Seth really does not like the taste of coconut oil so I can’t use too much. He also does not like coconut milk so I can’t use that as a substitute for cream. I’ve been using coconut oil instead of butter for everything else. I think I will try to make a ceviche with the shrimp.
If I don’t get dinner on the table in time when Seth is hungry, he starts begging me to order take out. Last night he wanted sushi and I had to tell him no — we are not allowed to have rice. What is the point of working so hard at this diet to blow it all on something dumb like rice?
I just need to come up with some more dinner ideas. I think maybe I’ll do a brisket this week.
Lunch is usually tuna salad, egg salad, or chicken salad (from leftover roast chicken). I have been serving lunch with lacto-fermented dill pickles.
Breakfast is eggs, fried in coconut oil, sometimes with sausage or bacon. Seth is allowed a cup of weak coffee (diluted with water). I’ve been drinking one cup of Dandy Blend. I have not had a single headache or other problem since I went off caffeine. I really think the Dandy Blend eases the transition.
The past couple of days Seth and I have both gone back to intermittent diarrhea. I figure we are detoxing.
